An egg-cellent way to start the day, this bacon, egg, and spinach casserole is sure to be a hit. Fair warning, it does involve a little more work ahead of time (namely thawing the spinach and pre-cooking your bacon) but it’s worth it! This is a dish we usually like to reserve for mornings that are a little slower or have the ingredients prepped the night before (chopping vegetables, cooking and crumbling the bacon, etc.) so that it is quick and easy to put together.
