This is a household favorite–especially in the summertime. At least for adults and teenagers. The littles still look at anything green with a high amount of suspicion and a low desire to eat it unless it comes out of a box with a leprechaun on the front. Sugary cereal addictions aside, this is a great lunch to make whether you’re prepping for the week (in which case prep the stuffing but leave the avocados whole until you’re ready to eat) or you need to use that little bit of chicken you have left over. This quick, easy, and (generally) nutritious dish is a great addition to any lunch meal rotation.
