Delicious? Check. Nutritious? Check. Easy and quick? Check and check! This recipe checks all of the weekday (or weeknight) boxes. The biggest downside to it–because let’s be real, almost any recipe has a downside whether it’s a big one or a tiny one–is there is some prep work to do with the vegetables. However, it is pretty straightforward and can be done early if you like to prep your ingredients at certain times during the week. I am not (at least not yet) that person–I am definitely a “chop right before use and hope I remember to use the fresh vegetables before they go bad” type of girl. But one day I aspire to be an organized queen so check back with me in a couple of years and we can revisit that statement.
